Mississippi Mud Potatoes

Creamy, cheesy, bacon-loaded potato goodness that melts in your mouth and rocks your taste buds! 🤤
Ingredients:
* 2 lbs baby potatoes, halved
* 1 cup sour cream
* 1 cup shredded cheddar cheese
* 1/2 cup shredded mozzarella
* 1/2 cup cooked bacon, chopped
* 1/4 cup butter, melted
* 1/4 cup chopped green onions
* 1 tsp garlic powder
* Salt and pepper to taste
* Fresh parsley or chives (for garnish)
Instructions:
1. Preheat oven to 375°F (190°C). Grease a large baking dish.
2. Boil halved baby potatoes in salted water for about 10 minutes until just tender. Drain well.
3. In a large bowl, mix sour cream, cheddar, mozzarella, melted butter, garlic powder, salt, and pepper.
4. Add the cooked potatoes and most of the bacon and green onions. Mix until coated.
5. Pour into the baking dish and spread evenly. Top with remaining cheese and bacon.
6. Bake uncovered for 30–35 minutes until golden, bubbly, and slightly crispy on top.
7. Sprinkle with fresh parsley or chives before serving.
Pro Tip:
Want a little kick? Stir in some diced jalapeños or a dash of hot sauce into the mix!
