Strawberry Shortcake Layer Cake

A light, fluffy cake bursting with whipped cream and sweet strawberries in every bite! 😍
Ingredients:
* 2 cups all-purpose flour
* 2 tsp baking powder
* 1/2 tsp salt
* 1/2 cup unsalted butter, softened
* 1 1/4 cups granulated sugar
* 3 large eggs
* 1 tsp vanilla extract
* 3/4 cup whole milk
* 2 cups fresh strawberries, sliced
* 1 cup strawberry jam or preserves
* 2 cups heavy whipping cream
* 1/4 cup powdered sugar
* 1 tsp vanilla extract (for whipped cream)
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a bowl, whisk flour, baking powder, and salt. Set aside.
3. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
4. Alternately add flour mixture and milk, beginning and ending with flour. Mix until smooth.
5. Divide batter between pans and bake for 22–25 minutes, or until a toothpick comes out clean. Cool completely.
6. Beat heavy cream with powdered sugar and vanilla until stiff peaks form.
7. Slice each cake in half horizontally to make 4 layers total.
8. Layer cake: sponge, whipped cream, sliced strawberries and a spoonful of jam. Repeat until topped with final sponge layer.
9. Frost the top with whipped cream and decorate with whole or halved strawberries.
Pro Tip:
For extra flavor, brush each sponge layer with a little strawberry syrup or juice before layering—it keeps the cake moist and delicious
