Ingredients:
* 1 lb ground beef
* 1 cup uncooked white rice
* 2 cups beef broth
* 1 can (15 oz) diced tomatoes
* 1 cup tomato sauce
* 1 green bell pepper, chopped
* 1 red bell pepper, chopped
* 1 small onion, diced
* 1 tsp garlic powder
* 1 tsp Italian seasoning
* 1/2 tsp salt
* 1/2 tsp black pepper
* 1 1/2 cups shredded cheddar cheese
* Optional: chopped parsley for garnish
Instructions:
1. Preheat oven to 375°F (190°C).
2. In a large skillet, cook ground beef with onion and bell peppers until meat is browned and veggies are soft. Drain fat.
3. Stir in diced tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper.
4. Add uncooked rice and beef broth. Bring to a simmer and cook for 5–7 minutes.
5. Pour mixture into a greased 9×13 baking dish. Cover with foil.
6. Bake for 30 minutes, then uncover and sprinkle with cheese.
7. Bake uncovered for 5–7 more minutes, until cheese is melted. Garnish with parsley and serve!

Use leftover rice to cut down cooking time or try it with ground turkey for a lighter twist!
